Sicily’s complex history is nowhere more evident than in its food. Greeks brought grapes and olives. Romans introduced beans, lentils and grains. Arabs brought nuts, spices, spinach, artichokes and rice. They also introduced sweets including ice-cream,granita, and candied fruits. There are influences from the Normans and Hoenstaufen such as air-salting of fish. The French brought a legacy of chefs for the aristocracy. And finally the Spanish who added chilli, sweet peppers and potatoes.
